When we the Team of Food Travel Luxury were with our recent exploration in the City of Bilaspur, Chhattisgarh, we found out this amazing café situated at the heart of City,
Location
Telephone exchange Road at Hotel Grand Amba. The Maze Café & the hotel itself doesn’t need any introduction in the City of Bilaspur as the Family Owners of the property have a very sound reputation among the people of the City.
Theme
The Maze café have a new theme now, the outlet have been under renovation & now it is ready with its new avatar. A fantastic cozy environment with great retro music playing, gives a feel of a metro city in an urban one.
Menu
They have recently launched their new menu which is a combination of great mocktails & healthy drinks, also the food contains various Options from the Italian Fusion & Indo Asian Mix. Some of the items which we tasted and also recommend are –

Drink – Bliss in Bilaspur: - Bliss in Bilaspur is their signature Drink at the Café & as per the team of the outlet the drink is dedicated to the Youthfulness of the town. A fantastic combination of Coconut, Pina & Mandarin oranges.
Drink- Berilicious: - If you are a Health freak and looking for a good option to sooth yourself & also nourish at the same time this drink is for you. A combination of Strawberry, Raspberry, & Blueberry with yoghurt served with Flakes & Pomegranate as Garnish
Ceaser Salad with Paneer Satey Grilled: - For salad lovers this master piece is a heaven. While Ceaser salad being from the category of Non Vegetarian Salads having anchovies & egg mayonnaise here they have created a Vegetarian version of the Classic dish. The Dressing here is 100 % Vegetarian & the Croutons are freshly sautéed in butter with oreganos drizzled, in spite of deep fried which gives bitterness to the flavor.
Smoked Black Pearl: - For vegetarian clientele who have ever wondered how a good barbeque chicken wings tastes like this is the dish you must try made up of Soya Fritters and tossed up in American Barbeque Sauce. Also the main highlight of this dish is, it is served in sizzling grilled platter which gives more enhancement to the flavor.
Mexican Quesadillas: - Beautifully Done! The style of Quesadillas which are offered here are nowhere less than the quesadillas from South America. Superbly sautéed shallots & Peppers with cottage cheese in Tortilla Bread served with Mexican & cheese dips.
Cheese Steak Sizzlers: - Yes you read it right they also do Steaks but due to the nature of the outlet being purely vegetarian the options here are limited to purely vegetarian lovers. Try their Cheese Steak Sizzler which is served with Pomodoro sauce as sizzlers with its accompaniments of Starch. You will love how the basil flavors perfectly match the home made tomato purée
Thailand Style Pad Thai Noodles: - Being among the healthiest options in Noodles the Pad Thai are rice based noodles. We have experienced the same style of noodles while our business trips to Thailand & were missing the same in India, especially in Chhattisgarh but when we tasted this dish here we can only say it is times better than the earlier. The Spicy curry flavors with combination of ground spices & Asian sauces make it worth each penny.
Pairs best with Maze Style Chilly.
Desserts -Strawberry Swizz Rolls: - We tried this strawberry swizz roll and it was wonderful. Comes on the bed of French Strawberry Purée & Vanilla Ice cream.
Kulfi Nest :- Dont miss this fantastic peice of art very beautifully made vermicilly with home made rabdi on top of 2 flavoured kulfi sticks .
